  • The nose presents a delightful competition between patisserie and candy store elements: pecan pie and pineapple upside-down cake (supported by warm caramel) are followed by an emphatic note of cinnamon Mike and Ike candies. The palate reveals unripened mango and fresh pineapple, dusted with cinnamon, followed by crème brûlée, spun sugar, and peaches in syrup. Those fruits extend to the finish, which ends with a scoop of vanilla ice cream lengthened by pepper and bright spice.

The eight days of Passover are not only one of the holiest periods in the Jewish calendar, but also one of the most dietarily restrictive. Grains that can be leavened (and, by extension, grains that can be fermented), are forbidden; apart from wine and brandy, there simply aren’t many options for people wishing to imbibe during the holiday. Enter Ari Klafter, formerly of Privateer (a singular producer of American craft rums) and currently head distiller for Thornton Distilling. Klafter quickly realized that the way to bring aged rum to Passover was to shift its maturation from traditionally used ex-bourbon casks to barrels previously unfilled. With his experience in producing American rum, he was able to craft a spirit that could technically satisfy KFP dietary guidelines while offering a delicious alternative for the Kosher dinner table. This release, produced especially for Single Cask Nation, is bright and lightly funky, tilting towards the confectionary qualities of bourbon, but with enough tropical fruit to guarantee a unique spirit worthy of the celebration.
