This novel lime cordial is made by double distilling Persian limes in Leopold Bros’ hybrid copper pot stills, with additional peels added between distillations. The spirit is then sweetened and acidified with house-made lactic acid to create verdant lime freshness with lasting, balanced acidity. Use it to add dimension to Gimlets and Gin & Tonics, or to bolster the lime juice in any cocktail that relies on lively citrus.
