"The Mylonas Winery 2025 Savatiano comes from old bush vines planted close to the sea at elevations of 200 to 300 meters in Attica. Fermented with indigenous yeasts and aged in stainless steel with three to four months of lees contact and bâtonnage, it offers more texture and ripeness than one might expect from this historic Greek grape. Aromas of stone fruit, soft lemon and Mediterranean herbs are framed by subtle mineral notes, while the palate shows attractive weight balanced by fresh acidity. A distinctly saline character emerges on the finish, reflecting the vineyard's maritime influence. Savatiano is currently in the process of obtaining PDO Athens status, a development that underscores the growing recognition of this important local variety and its historic homeland."
