"The Sarris 2025 Robola of Kefalonia shows delicate aromas of honeysuckle layered over pear and Golden Delicious apple. Those orchard-fruit notes give the wine a pithy richness, while a subtle cinnamon-like spice emerges naturally from the fruit, as the wine is made entirely in stainless steel. Wild fermented over two weeks and aged for six months on its fine lees, the wine balances texture with mild freshness. The fruit comes from terraced limestone vineyards planted to 15- to 35-year-old bush vines at elevations ranging from 350 to 700 meters above sea level, underscoring the variety's strong connection to Kefalonia's mountainous landscape. Production totals 20,000 bottles."

"Panos Sarris™ eponymous winery is located in south-west Cephalonia. A former sommelier, Sarris established the winery in 2016 with just a few barrels of wine. Today it is a respected name, particularly for Robola. This is made with hand-harvested grapes from two terraced vineyards at 700m, planted in 1980 and 2000. It™s fermented in steel but feels more savoury than fruity, with notes of sesame seed, peanut and candle wax overlaying ripe Golden Delicious apple, ripe citrus and yellow plum. Firm, bone-dry and concentrated, this drinks like serious Chablis."
