- Mash bill of 40% non-GMO yellow dent corn from Catesa Farms in Riddleton, Tennessee, 53% pale malted rye from Canada, 6% caramel malted rye from the UK, and 1% chocolate malted rye from Germany
- Temperature-controlled, open-top fermented for 7 days with a yeast strain typically used for bourbon
- Distilled in a 30-foot high 18-plate Vendome column still and custom Vendome copper doubler
- Aged in a char #4 53-gallon American oak barrel with a custom toast from Independent Stave Company
- Aged a minimum 4 years; non-age statement
- Non-chill filtered; 59.15% ABV
The nose opens with sandalwood and cocoa, layered with pumpkin pie spice and molasses. Inviting savory notes of pumpernickel bread and leather on the palate punctuated by a lively mix of cinnamon and a pleasant prickle of Szechuan peppercorn. The body is lush and silky, with a vibrant and refreshing tingle.
