• Aged rhum agricole produced by Rhum Clément in Le François, Martinique
• AOC Martinique Rhum
• Distilled from sugarcane juice at Fonds-Préville Distillery in Macouba, Martinique
• Open-tank fermented with French baker’s yeast for 24 hours
• Distilled in a Creole copper column still
• Aged, blended, and bottled at Habitation Clément
• Aged 3 years in a combination of ex–bourbon and new American oak barrels
• Notes of black olive, vanilla, coconut, cocoa, and sea salt with lightly charred oak, nutmeg, dried peach, and almond on a dry but fruity palate
• No added sugar or coloring

This aged, or vieux, rhum agricole carries a V.O. designation which requires a minimum of three years of barrel aging—in this case, the wood alternates between new American oak and ex–bourbon barrels that have been shaved and toasted.
