  • Pure granitic soil and decomposed granite deposits
  • Grapes were hand sorted, 30% were left as whole bunches, and 70% were destemmed, but not crushed
  • Fermented with indigenous yeast in concrete tanks and one large vertical wooden foudre
  • The wine was left on the skins for a total of three weeks, including pre-ferment cold soak
  • The cap was lightly punched down twice per day, delicately extracted, and then pressed off into the old 4,000L vertical foudre and a single concrete cube for aging

"The David & Nadia 2023 Swartland Pinotage, also referred to as œTopography Pinotage” (as seen on past labels), comes from three hectares in the Paardeberg, harvested in mid-January from an earlier-ripening north-facing slope. Fermented with 80% whole berries and partial carbonic maceration, it matures in large foudre for one year. The wine is punchy and vibrant, crafted to withstand Pinotage™s naturally higher pH and susceptibility to spoilage. Carefully handled to avoid masking with oak or commercial yeast, it offers freshness and structure. Granite soils and elevation in the Paardeberg lend balance to a variety often misunderstood."
