"The NV Palo Cortado VORS is a Palomino from Jerez, with a brief biological phase three decades ago before moving into oxidative aging. Wood, curry spice and dried herbs dominate, with a faint vermouth-like complexity. Dry yet glyceric, it delivers notable concentration and length, with almost no trace of its biological origins.
