- Vinified in two distinct batches: 1. skin-fermented, full MLF and aged on lees and ullage without SO2 for 20 months 2. pressed then barrel fermented with full solids, partial MLF and matured on lees for 20 months
- Maturation took place in a combination of old 500L puncheon barrels and small stainless-steel vats
- Careful racking directly off of lees and blended to bottle with a small amount of sulfur in December 2024
