  • Mangoes are sliced and dehydrated and the chiles are dried and seeded
  • All botanicals are co-macerated for 24 hours before they are vapor-infused via basket in a 300-liter alembic copper pot still
  • After distillation, the gin is divided into three parts for additional infusions: one with mango and one with mango and chile; the final part is left unaltered
  • After 24 hours the components are blended and rested for 5 days before bottling
  • An initial hit on the nose of sweet, fibrous mango, dried chile, and canned peaches in syrup is met with classic gin undertones of juniper, coriander, and citrus, preceding a silky, enchanting palate of perfectly ripe mango, tangerine, dried papaya, lemongrass, and earthy angelica root with hints of baking spice and faint Pasilla Mixe heat on the finish
  • Non-chill filtered; 40% ABV

Made using Pasilla Mixe chiles and Ataúlfo mangoes (also known as Champagne mangoes) sourced through direct relationships with farmers in Chiapas, Armónico Mango Gin is a delightfully fruit-forward departure from the herbaceous fervor of the brand’s flagship expression, achieving a perfect balance of fruit and spice for adding depth and structure to cocktails. You’ll have no trouble figuring out what to do with this one—use it as the base of your favorite gin cocktail, in a split base with just about anything from mezcal to aged rum, or pour it straight from the bottle into a glass and enjoy with or without ice.
