"A powerful chardonnay-based Champagne from one of the most famous red wine villages, Bouzy, it's big and rich with lots of fruit and phenolics. It's very aromatic, with cooked apples, pie crust, iodine and bacon on the nose. Full-bodied with intense fruit and phenolics. A shaft of fruit and compressed tannins at the end show a great finish. Chevalier Montrachet with bubbles. 48 months on the lees. 3 g/L dosage."

"Sourced from south-facing vines planted in 1961, Paillard's 2021 Blanc de Blancs Bouzy Grand Cru Les Mottelettes opens in the glass with aromas of linden blossom, citrus oil, resin and freshly baked bread. Medium-bodied and textural, it is elegantly muscular and vibrant, with a racy spine of acidity, a crisp core of fruit and a pronounced saline character, concluding with a long, orange-inflected finish. Disgorged in December 2025 with a dosage of three grams per liter, it should reward both near-term enjoyment and extended cellaring."

"The 2020 Extra Brut Bouzy Grand Cru Les Maillerettes, 100% Pinot Noir from vines planted in 1970, is open-knit, attractive and quite seductive. Crushed flowers, cranberry, spice, mint, dried herbs, kirsch and macerated cherry are some of the notes that grace this sensual, inviting Champagne. Savory undertones accentuate the vibrant finish. Dosage is 3 grams per liter. Disgorged: December 2024"

"The 2020 Blanc de Blancs Bouzy Grand Cru Les Mottelettes, disgorged in December 2024 with a dosage of three grams per liter, is flamboyant, unfurling from the glass with aromas of nashi pear, apricot, white peach and sandalwood mingled with brioche. Full-bodied and ample, the palate is broad-shouldered yet vibrant, with a generous core of fruit and old-vine concentration underpinned by ripe yet racy acids, concluding with a long, enveloping, saline-tinged finish. Unsurprisingly, it offers a more generous drinking experience than the 2021 rendition."

"This minerally, saline Champagne shows restrained power. Aromas of crushed stones, fresh croissants, grapefruit, honeysuckle and peach pits follow through to a medium-bodied, dry and focused palate with a creamy mousse and a long, saline finish. "Defined by its south-facing exposition and the warmth of the growing season, Paillard's old-vine Chardonnay, the 2019 Blanc de Blancs Bouzy Grand Cru Les Mottelettes, is a muscular, broad-shouldered and powerful expression of its place. Sourced from a parcel planted in 1960 with shallow topsoil of just 40 centimeters, it jumps from the glass with aromas of dried white flowers, succulent pear and warm bread. Full-bodied and enveloping, it possesses an expansive mid-palate and ripe yet vibrant acidity. Distinctly opulent, it is a wine of unmistakable identity, likely to stand out in a blind tasting among Côte des Blancs counterparts. It was disgorged in January 2024 with a dosage of three grams per liter."
