"Paillard's NV Rose Bouzy Grand Cru Les Terres Roses XVIII, composed of 64% Chardonnay and 36% Pinot Noir, is based on the 2018 vintage and was disgorged in November 2022 with a dosage of one gram per liter. It soars from the glass with a bouquet of orange oil, cherry and apricot mingled with notes of lychee. Medium- to full-bodied and unctuous, it has a sweet core of fruit and a succulent profile underpinned by ripe yet vibrant acidity, concluding with a long finish marked by a bitterness as the phenolics assert themselves."

"Paillard's NV Rose Bouzy Grand Cru Les Terres Roses XX, based on the 2020 vintage and disgorged in November 2024 with a dosage of three grams per liter, bursts from the glass with aromas of cherry, cranberry and raspberry mingled with brioche and a faint hint of clove. Medium- to full-bodied, textural and ample, it is built around a fleshy core of fruit, with ripe yet racy acids and a perfumed, lingering finish. It's an expressive rose that will drink well over the near term."

"A medium pink color, the NV Champagne Grand Cru Bouzy Les Terres Roses XX Extra Brut is based on the 2020 vintage and spent 10 months on the lees in fût, followed by 30 months in the crayères. The blend is 64% Chardonnay and 36% Pinot Noir, with 5% of that Bouzy rouge. The nose is fruity and inviting, and the wine speaks to the ease and delightful fruit of the 2020 vintage, with its fruity and floral character, medium body, and refined Pinot Noir mousse. The mousse has a delicate peppery spice that enhances the prettiness and floral quality of the fruit, with cherry blossoms and delicate pastry notes. Drink 2025-2035. I love where this is now, and although it should have no problem drinking well for another ten years, why wait?"

"The NV (2020) Extra Brut Les Terres Roses is gorgeous. Rich, creamy and expansive on the palate, the Terres Roses is so inviting. All the textural breadth of Bouzy comes through loud and clear. Cranberry, white pepper, slate, chalk, mint and dried herbs build slowly through the mid-palate and into the rich, resonant finish. This vinous, ample Rosé is a winner. The Terres Roses is 64% Chardonnay and 35% Pinot Noir, of which 5% is still red wine. Dosage is 2 grams per liter. Disgorged: November 2024."
