"For all the ambition at the top of the Paillard portfolio, the entry-level Les Parcelles is still the calling card of this small house. Grapes from Bouzy, one of the hottest villages in Champagne, were certainly exceedingly ripe in the solar 2022. Yet the deep, baked apricot fruitiness of the year, along with dried pear, Seville orange and ripe grapefruit, is tethered with gentle acidity and the complexity of brown pastry, savoury spice and white pepper helped by oak fermentation and reserve wines. It's a Champagne that manages to retain youthful energy without sacrificing depth."

"A toasty version, animated by racy acidity, with fragrant accents of lime blossoms, grilled macadamia nut and vanilla enmeshed with flavors of lemon meringue pie, wild cherry, tangerine peel, chopped hazelnut and fleur de sel. "Disgorged in November 2024 with a dosage of one gram per liter, Paillard's NV Bouzy Grand Cru Les Parcelles XIX is based on the 2019 vintage, complemented by 30% reserve wines from 2018 to 2016. A blend of 80% Pinot Noir and 20% Chardonnay sourced from south-facing slopes and vinified in 350-liter barrels, it unfurls from the glass with aromas of tangerine zest, grapefruit and nectarine, mingling with brioche and spices. On the palate, it™s medium to full-bodied and concentrated, with a rich core of fruit underpinned by vibrant acidity, concluding with a chalky finish. This is a fine introduction to the estate, based on a terrific vintage. As always, it derives from some 25 plots in Bouzy."

"Paillard™s NV Bouzy Grand Cru Les Parcelles XX hails from the 2020 vintage and, in keeping with the tradition, incorporates 20% reserve wines. It embodies the signature blend of 80% Pinot Noir and 20% Chardonnay, sourced exclusively from the sun-drenched, south-facing slopes of Bouzy. The bouquet is expressive, unfolding with aromas of pear, ripe citrus and warm spices, mingling with nuances of toasted bread and orange zest. On the palate, it is medium- to full-bodied, showcasing a livelier, more luminous fruit profile than its predecessor, driven by racy acidity and finishing with a pronounced saline finish. True to the estate™s approach, maturation take place in 350-liter oak barrels, with the final cuvée composed from a mosaic of approximately 25 distinct parcels across Bouzy. The dosage is set at two grams per liter."
