All rice used for this is grown in house by the brewery, high grade Yamada Nishiki milled to 49% retaining a lot of power and impact. Ginjo grade sake is often light, pretty and restrained, but Azumaichi makes this Ginjo big, rich and powerful, accentuating the inherent energy and flavor of their excellent rice, but also as a match for the cuisine of southern Japan, where flavors tend to be bolder and more assertive than the north.
