High Wire Distilling
Straight Bourbon Whiskey, 'Jimmy Red Classic'
Straight Bourbon Whiskey, 'Jimmy Red Classic'
- Small batch straight bourbon whiskey produced by High Wire Distilling Co. in Charleston, South Carolina
- Distilled from 100% Jimmy Red heirloom red dent corn (Zea mays indentata) currently sourced from 4 (and historically sourced from as many as 8) local and regional farms
- Corn is milled at the distillery with a hammer mill and fed directly into the mash tun
- Water is sourced from the Edisto River Basin (filtered for chloramines for fermentation and distillation; deionized for proofing)
- Sweet mash fermented for 6–7 days in temperature-controlled, closed-top stainless steel tanks with barley enzymes and top-fermenting pitched yeast
- Distilled on the grain in a single pass on a CARL hybrid copper pot still (a dephlegmator on the column is set to minimize reflux)
- The harvest of each farm is batch distilled and barreled separately before blending
- Aged a minimum of 4 years in 53-gallon char #3 new American oak barrels with a medium toast that have been air seasoned for 18–36 months (primarily from Charlois and Kelvin cooperages); non-age statement
- Produced in batches of 5–10 barrels
- The nose offers wildflower honey, Nutter Butters, hard spice, candy corn, plus a range of corn sensations, from silk to green husk to fresh cob milk to lightly roasted corn. The palate is ample and buttery, finishing with charred corn husk, a hint of barrel grain, and punchy proof.
- Double Gold medalist at the 2024 San Francisco World Spirits Competition
- Non-chill filtered; 47.5% ABV
Showcasing High Wire’s restrained approach to maturing their opulent, grain-driven new make, the Classic expression offsets the richness of the whiskey with a subtle application of oak that sees significant air-seasoning prior to toasting and charring. The heart of the matter, of course, is Jimmy Red corn (the only grain in the mash bill), the rare heirloom variety that High Wire has revived. Packed with rich oiliness, varied shades of sweetness, and spice, it offers even connoisseurs a unique tasting experience. Built like a sipper but priced for cocktailing, it’s a bourbon that demands restraint in mixing, the better to highlight its singular character.
