Flos Castanea Orange Filipa Pato

100% Bical sourced from a single, limestone-laden vineyard planted in the 80’s • Grapes are fermented on the skins with the addition of chestnut flowers (Flos Castanea means Chestnut Flower in Latin) for 2 weeks in open-top lagar until fermentation is complete • Solids are then pressed and aged in a combination of large neutral barrels (pipas) and some amphorae for a year or until naturally stable • The use of chestnut flowers as a sole preservative is inspired by a practice pioneered by the grandfather of Portuguese biodynamics, Fernando Paiva.

"Aromas of orange rind, tile and a floral undertone. The palate is sharp and chalky in texture, with a savory thread running through. Minerally, incisive and linear, with precision and texture. This was macerated for two weeks with chestnut flower extract, which acts as a natural preservative to avoid adding sulfites. Drink now."

"This has aromas of golden fruit, dried chamomile and tile. The palate is medium to full bodied, with brightness and a lovely, compelling chalky texture, leading to a saline finish. This is 100% bical from around 40 year old vines on Jurassic limestone soils. Destemmed and skin fermented for two weeks in open lagares with punch downs, using chestnut flower as the sole preservative, then pressed in a traditional basket press and aged for a year in 500 liter oak casks and amphorae. From biodynamically grown grapes with Demeter certification."
