- Clay soils
- Hand harvested in small batches
- Each parcel is fermented separately with indigenous yeast in open top fermenters
- Aged 21 months in seasoned French oak barriques
- Bottling is carried out by hand with no filtration
- Aged for 20 months in bottle prior to release

"The 2021 Cabernet Sauvignon, blended with a touch of Cabernet Franc, comes from a parcel opposite the Steepside vineyard, with these vines planted in 2006. This has a finely detailed bouquet with blackberry, briar and a dash of white pepper. There is almost something Rhœne-like about this cuvše! The palate is medium-bodied with fine tannins, revealing plenty of dark red berry fruit intermixed with white pepper, garrigue and graphite. Possessing fine length, this is a deftly made Cabernet doing a delicious impression of a Syrah!"

"This graceful red is generous with its display of black currant and black cherry fruit, yet there's a subtle reserve as well. Refined tannins are well-integrated, and notes of licorice string, cured tobacco, stone and iron join the core of fruit flavors to play out slowly on the long, lightly mouthwatering finish."
