- Mash bill of 74% non-GMO yellow dent corn from Catesa Farms in Riddleton, Tennessee, 15% pale malted wheatfrom Canada and Germany, 7% oak smoked malted wheat from Germany, and 4% caramel malted wheat from Germany
- Temperature-controlled, open-top fermented for 7 days with a yeast strain typically used for single malt
- Distilled in a 30-foot high, 18-plate Vendome column still and custom Vendome copper doubler
- Aged in a char #4 53-gallon oak barrel with a custom toast from Independent Stave Company
- Aged a minimum of 4 years; non-age statement
- Non-chill filtered; 59% ABV
On the nose, mustard seed and honeysuckle lead, layered with peppery green notes and a lift of cinnamon spice. The palate opens with honeyed cereal tones reminiscent of Honey Bunches of Oats, followed by dried fig and a savory, root-vegetable character, with rutabaga adding depth and intrigue. The texture is tannic and gently drying across the palate, building into a pepper-driven finish that lingers with warmth.
