"The NV Amontillado Príncipe de Barbadillo comes from Sanlúcar de Barrameda. Oxidative aging dominates the nose with caramel, licorice, coffee and mocha, while the background still hints at its biological origins through toasted bread and yeast. Broad and dry, with integrated alcohol, it carries that spice-and-cask perfume typical of the style. The finish is long and satisfying, with slight bottle-age evolution already emerging. "Labelled as 12 Years Old, this wine in fact spends eight years under flor and a further eightwithout. It retains Barbadillo,s hallmark Sanl£car style: lithe and taut, with a lemony energyand smooth texture. The wood is slowly taking centre stage, but there is also plenty of fruit.Sophisticated."
