To the absinthe enthusiast (or purist), the best absinthes are made with what is referred to as the “holy trinity” of absinthe botanicals: grand wormwood (Artemesia absinthium), green anise, and fennel. While many absinthes are made using the more resinous star anise—which often evokes aromas of black licorice—green anise is softer and lighter in profile with aromas of green apple. Leopold Bros sources their green anise in seed form from Andalusia, where Todd Leopold believes the best green anise in the world is grown, and mills it onsite at the distillery. After distillation, its namesake verte (green) color is naturally derived from a final herbal maceration.
