Kally

Kally is a California-based producer of non-alcoholic verjus founded in 2019 by Katie and Scott Mitic. Their interest in production began after some positive experiences with N/A pairings when dining out and travelling, and they soon began experimenting in their kitchen at home. After a serendipitous conversation with a bartender about verjus and its uses, the base of their brand was decided upon, and they slowly began building Kally up to what it is today.

Kally begins with organic grapes from Sonoma, Mendocino, and Madera. All of their growers farm organically and biodynamically, caring deeply about sustainability in their practices. The grapes are harvested at approximately 11.5 brix, much earlier than is traditional for wine grapes, giving the verjus about half the sweetness while maintaining high acidity.

The verjus is blended with fruit juice and herbs to round out the flavor profiles but keeps a dry finish and food friendly flavor profile. There is no added sugar and all ingredients used (including the grapes) are certified organic.

Their bottlings are distinct in that they are not dealcoholized in any capacity. The products are simply built up from fresh ingredients making them a true 0% wine alternative offering, while still maintaining complexity and mouthfeel that are sometimes lost in the dealcoholizing process.
