August and September harvests from Reisetbauer’s own organic-certified grove of nearly 17,000 Williams pear trees ensure optimal ripeness for fermentation.

The spirit that catapulted Hans Reisetbauer to stardom, this Poire Williams style pear eau-de-vie is produced by Hans Reisetbauer in Axberg, Austra. Hans hand-harvests organic estate-grown Williams pears (aka Bartlett pears) from the Reisetbauer family farm’s grove of nearly 17,000 Williams pear trees underripe, ripe, and overripe to capture the purest and most complete expression of the fruit for this eau-de-vie. After harvesting, the fruit is stored for 2 days to ripen further before being mashed and fermented between 16–17 °C (60–63 °F) in stainless steel for 8­–10 days.
