Sparkling Wine 'Cruse Tradition'

This wine is a blend from three extraordinary grape growing sites: Rorick Vineyard high in the Sierra Foothills (56%), Rita’s Crown in coastal Santa Barbara (29%), and Alder Springs in cool Mendocino County (15%) all from the 2016 vintage. Chardonnay is the main component (85%) mixed with Pinot Noir (15%). This unique combination represents what we believe to be the future of California sparkling wine.

The grapes were pressed using a traditional Champagne cycle and press cut. The wine proceeded through a native primary and malolactic fermentation in barrel. The wine was racked once and tirage bottled without fining or filtering. After approximately two years under tirage the wine was riddled and disgorged à la volée with zero dosage.
