  • Barley is mashed and fermented using chalk-filtered water from beneath the Yorkshire Wolds (a range of open country hills that spans East & North Yorkshire), and distilled on Forsyth copper stills
  • Non-age statement; Aged in ex-bourbon barrels; finished in shaved, toasted, re-charred (STR) ex-red wine barriques from Rioja vineyards in Spain
  • A nose of vanilla, licorice root, apple, nutmeg, and black pepper transition to a palate of apple, candied cherry, freshly turned soil, toasted oats, and pomegranate with subtle salinity
  • Bottled without additives or coloring
  • Non-chill filtered; 48% ABV

This expression is matured in ex-bourbon casks to soften and develop its profile before being transferred to shaved, toasted, and re-charred (STR) ex-red wine barrique casks from the Rioja region of Spain. The process of toasting and charring removes intense tannins and draws out the desired sugars and spice notes. The STR finish was pioneered by the late Dr. Jim Swan, who mentored Spirits of Yorkshire founders Tom Mellor and David Thompson.
