Schiava Alto Adige, San Pietro
95% Schiava, 5% Lagrein grown in clay soils of morainic origin. The total of 11 hectares is divided into small vineyards on the slopes of Santa Maddalena, near Bolzano. Destemming is followed by a soft pressing of the fruit. Fermentation and maceration with the skins, followed by racking in oak casks for malolactic fermentation. Wine is aged for 5 months in 50 Hectolitre oak casks.
