• Hand-harvested
• 60% whole cluster and the rest destemmed whole berry
• Fermented in small fermenters for 14-20 days with a mixture of pump-overs and punch-downs
• Aged in French oak for 12 months (25-30% new) then consolidated into used barrels for an additional 3-6 months
