Orvieto Classico ‘Terre Vineate’, Palazzone
50% Procanico, 30% Grechetto, and 20% Verdello, Drupeggio & Malvasia. Giovanni Dubini tackles the delicate art of adjusting the proportions of the five different grape varieties allowed in Orvieto D.O.C. The fruit is soft-pressed and fermented in temperature-controlled steel vats for 20 days at 20°C, followed by aging entirely in stainless steel prior to release.
