85% Pinot Noir, 15% Chardonnay handpicked, selected, and kept separate according to their vineyard location.The fruit is cooled before pressing and then the juice is fermented dry in temperature-controlled tanks. The lots mature in tank until May, and are then blended and bottled prior to secondary fermentation. The 2012 was on the lees for over 48 months prior to disgorgement.
