Islay Single Malt Whisky, '10 Year Single Sherry Evolution Cask', Kilchoman Distillery
Anthony Wills and his wife, Kathy, created Kilchoman from a collection of derelict farm buildings in 2005, and in doing so, established the first new distillery on Islay in over 124 years. Their passion for whisky has transformed Kilchoman from a dream into a celebrated reality. The small team at this farm distillery controls as many aspects of the production process as possible, from growing their own barley, to floor malting the grain on site, to operating the stills by hand. Their resulting Single Malt Whiskies have become highly-prized ambassadors of this next generation of Islay producers.

For the first time since the distillery started production in 2005, Kilchoman has released a 10-year-old single sherry cask to the US market. This single sherry cask is unlike most sherry cask matured whisky in that the cask itself, a vintage butt made from European oak, held very old oloroso sherry. Casks like these, old European oak butts, are like hen’s teeth nowadays. Bottled at 55.6% ABV, this whisky offers up a wonderful array of flavors which include soft, earthy peat, baker’s chocolate nibs, chicory, and stewed prunes. These notes are balanced quite nicely with both a potpourri floral elegance, Lapsang souchong tea, and a warming spiciness on the finish.
