Il Gentile di Casanova, Casanova della Spinetta
100% Prugnolo Gentile (Sangiovese) grown in calcareous soils with ocean sediments at an average altitude of 250m. Alcoholic fermentation for 10-11 days followed by malolactic fermentation in oak. Aged entirely in medium toasted French oak (600 liters) for 24 months. Transferred to stainless steel vats for 10 months before bottling, aging in bottles for another 6 months. Bottled unfined/unfiltered.
