At 3,000 feet elevation, the Santa Barbara Highlands Vineyard is a combination of decomposed granite and clay loam. The diurnal shift allows for a rebalancing after often-soaring daytime temperatures. This wine is made with 67% whole cluster inclusion to help balance the tannins, with native fermentation followed by secondary fermentation in barrel. Flavors of sandalwood, copal and rosewater.
