Dry Sparkling Cider, ‘Geneva Russet’ , Kite & String
A carefully blended traditional-method cider designed to highlight the low acid, complex character of the Russet apple – a thoughtful contrast to our typically higher-acid offerings. The creaminess from secondary fermentation combined with a slight dosage gives weight to this cider, complimenting the honey aromas of the Margil and Golden Russet. This 2017 vintage began with a partial ferment of the Russets before adding the bittersweets, extending the process by 50%, and greatly slowing fermentation.
