Bone-dry traditional-method sparkler focused on European bittersweet apples (60%) backed with acid from American sharps. A long, slow and calm primary fermentation using multiple yeast strains helped to preserve varietal character. Loose yeast used in tirage to maximize yeast contact/ autolysis. Carbonated to 3.5 volumes of pressure.
