Dolcetto d'Alba, Paolo Scavino
100% Dolcetto from 70-year-old vines, sourced from the Marne di Sant’Agata limestone soils of the Bricco Ambrogio vineyard in Roddi d’Alba. The grapes are hand-harvested during the second week of September. Maceration and fermentation in stainless steel with temperature control and indigenous yeasts. The wine is aged in stainless steel for six months.
