- Native yeast fermentation and only minimal sulfur added at bottling
- Once all the natural yeast and microbes completed their predestined purpose, the wine was left to settle on its own voluntarily
- Matured for 11 months in 4th fill 500L French oak barrels

"The 2022 Chenin Blanc Schist is aged in 500-liter older barrels with no b'tonnage. It has a beautifully defined bouquet with pressed white flowers, litchee, powdered stone and a touch of yellow fruit. The palate is very well-balanced with a texturally seductive opening, lightly spiced with plenty of spicy ginger here and a vivid white pepper-driven finish that lingers in the mouth. Excellent."

"Displaying a softer nose with a dusty and ripe fruit condition, the 2022 Schist Chenin Blanc displays a more approachable expression with aromas of waxy apples and a broad, open accessibility. Medium-bodied, the palate is abroad and ready for action, showing succulent acidity with notes of juicy peaches and Honeycrisp apple before concluding with a ripe, succulent finish. Enjoy with food."
