I have long coveted this cuvée, which they produce in miniscule quantities. It’s all ’06 and all Bisseuil, and it’s utterly delicious, amazingly sprightly and flowery for an ’06; total wisteria and purple lilac; endlessly charming, limpid, a girlish giggle of fruit; finishes with balsam and lavender. This isn’t “mineral;” it’s a garden of flowers on a mild morning, just as the sun hits it.

(made from mostly 2006 wine): Light gold. Pungent aromas of peach skin, honey and chamomile, with an undercurrent of smoky minerals. Shows good power and depth, with deep citrus pith, pit fruit and honey flavors. Picks up a licorice note on the long, chewy finish. A serious, brawny Champagne that's well suited to richly sauced, full-flavored foods. - Josh Raynolds
