Cerasuolo di Vittoria Classico 'Iri da Iri', Valle dell'Acate
From the estate’s oldest vines of Nero d’Avola (60%) and Frappato (40%) which are 20-25 years old. After a rigorous selection of the finest bunches, the grapes are destemmed and pressed, and the must is spontaneously fermented with indigenous yeasts on its skins for about ten days. The wine is then transferred to 500L French oak casks where it is aged for 36 months. The tonneaux are in service for 7 years, and 14% are new. The wine is then further 18 months in bottle before commercial release. 2013 is the first release.
