Long maceration with the skins and alcoholic fermentation for approx. three weeks with temperature control. The must is pumped over twice a day. Spontaneous malolactic fermentation. The wine matures in large oak casks of a capacity of 36-50 hectolitres for a minimum of 4 years. Finishing in the bottle for approx. one year.
