Tasting Notes

Starlight Distillery’s bonded bourbon is produced in Starlight, Indiana, in accordance with the Bottled in Bond Act of 1897. Comprised primarily of two distinct mash bills—a 3-grain mash bill of 60% corn, 20% rye, 20% malted barley and a 4-grain mash bill of 51% corn, 20% rye, 20% malted barley, 9% wheat—the majority of the non-GMO corn and rye is estate-grown while the wheat and malted barley are locally sourced. Sweet mash fermented for an average of 7 days in stainless steel and twice-distilled in a 500-liter Vendome brass and copper pot still, it is then aged 4.5 years in a federally bonded rickhouse, mostly in air-dried barrels from Canton Cooperage with toasted heads and char levels ranging from 1–4. Red apple, cinnamon, toffee, and sourdough on the nose transition to charred marshmallow, orange peel, and arugula on the palate with allspice and sour cherry riding out the finish. 50% ABV.
