Bianco di Custoza, Cavalchina
40% Garganega, 30% Fernanda, 15% Trebbiano & 15% Trebbianello. Each variety is vinified separately in temperature controlled stainless steel. Only Fernanda does a brief maceration before being pressed. Malo is blocked and the wine stays on the lees until February, when it’s assembled with the other varieties for the final cuvee.
