Barolo ‘Pajana’, Domenico Clerico
100% Nebbiolo from the Pajana vineyard in the Ginestra cru. Fruit sits at 350 meters above sea level, with southeast-facing vines planted to calcareous clay soils with a small percentage of sand. Maceration on the skins occurs over 20-30 days. Aging takes place in French oak barriques and 50hL casks for 32 months prior to bottling.
