Amarone Classico Riserva, Tenuta Santa Maria
75% Corvina, 10% Rondinella and 15% Corvinone sourced from 30-year-old vines in the calcareous clay hills of Arbizzano di Negrar. The vines are trellised via the Guyot system. The grapes, hand-selected for early harvest in mid-September, are left to dry on bamboo mats for 4 to 5 months. In the middle of January, after reaching their desired sugar content and losing 40-50% of their original weight, the almost raisin-like grapes are pressed and fermented for 25 to 30 days at controlled temperatures with daily punch downs. Following 48 months of aging in tonneaux, the wine is bottled, where it remains for 6 months before release.
