Tohoku Meijo Hatsumago Makiri

Located in the northern port city of Sakata in Yamagata Prefecture, Tohoku Meijo has been making fine quality sake since 1893. Sakata is where the Mogami River meets the sea of Japan, bringing the excellent rice grown in Yamagata’s interior to port.

Tohoku Meijo is one of just three breweries in the world that exclusively makes traditional kimoto method sake. More labor intensive and time consuming than the commonly used sokujo method kimoto naturally grows its own acid, and picks up microbes unique to the brewery itself, bringing depth, richness and acidity to sake,
