"The 2021 Hárslevel? 21 Buckets was pressed directly and was fermented in a 1,200-liter acacia barrel. The first hit on the nose is of dark honey despite there being no botrytis at all. This fades into mellow apple flesh while coloring it with its honeyed vibe. The palate is smooth but more streamlined than its 2022 counterpart. The freshness is rounded and mild, and again, an earthy tang holds both yeast and saltiness. It is the saltiness that intensifies on the long, dry finish. The wood is barely noticeable. (Bone-dry)"
