San Baltazar Guelavila is a small town in the district of Tlacolula with fertile, limestone-rich soil—ideal for agave growth. The harvested agave’s concentrated sugars result in a refined Espadín of great character and exceptional length, bolstered by Maestro Mezcalero Don Goyo’s carefully controlled natural fermentation—including the propagation of roses and lime trees alongside the tinas.

Tasting Notes

San Balthazar Guelavila is a small town in the district of Tlacolula, right next door to other well-known distilling communities San Baltazar Chichicapam and Santa Catarina Minas. Don Gregorio “Goyo” Martinez’s Espadín grows at around 5,500 feet elevation on mountainous terrain in very fertile soil, composed primarily of limestone. The agave is cooked in conical earthen oven, milled by stone tahona, and fermented in wooden tanks before being distilled twice in traditional copper pot stills. The agave’s concentrated sugars result in a refined Espadín of great character and exceptional length, bolstered by Don Goyo’s carefully controlled natural fermentation. 47% ABV (Alcohol will vary from batch to batch).
