Junmai Daiginjo Sake, ‘Hanafubuki Shower of Blossoms’, Kotsuzumi
50% polished Gohyakumangoku rice, which is a well-known inexpensive sake rice which you can get from many different parts of Japan. This rice produces an affordable Daiginjo with high quality, but it is not as unique as the other rice types at Nishiyama. Half of the rice for this sake is grown at Nishiyama.
“Hanafubuki” is the go to house cuveé and it showcases Kotsuzumi’s roundness coupled to its ever present poise. Thoroughly enjoyable with sashimi, sushi or as a stand-alone sipper. Try it cool, lukewarm, or hot.
